Ingredients:
Pesto:- Arugula - 2 cups
- Walnuts - ¼ cup (chopped)
- Garlic - 1 clove
- Grated Parmesan cheese - ¼ cup
- Olive oil - ¼ cup
- Salt - ¼ teaspoon
- Pepper - ¼ teaspoon
- Tilapia fillets - 4 pcs
- Salt - ¼ teaspoon
- Pepper - ¼ teaspoon
- Breadcrumbs - 1/3 cup
How to cook:
Pesto:In a blender grind arugula, place chopped nuts, squeeze the garlic. Whisk, add the Parmesan, salt and pepper. Pour the olive oil and mix.
Heat the oven to 200 degrees. Grease a baking dish with oil. Put the fish fillets in the dish, put 1.5 tablespoons of pesto on each fillet. Close the breadcrumbs, salt and pepper. Bake for about 10 minutes.
