Salmon In The Glaze Of Soy Sauce Recipe

Salmon In The Glaze Of Soy Sauce Recipe

Ingredients:

  • 1/2 cup dark brown sugar
  • 1/2 cup water
  • 1/2 cup soy sauce
  • 1/2 cup mirin (sweet rice wine), or 1/2 cup of sake (or vodka) with 1/4 cup sugar
  • 1 1/2 tablespoons fresh ginger, peeled and coarsely chopped
  • 1 teaspoon ground coriander
  • 4 whole pea black pepper or 1/2 teaspoon ground black pepper
  • 2 salmon fillets (about 180 g)
  • 2 teaspoons vegetable oil (or grape seed oil)
  • 2 tablespoons green onions, finely chopped
  • 1 tablespoon toasted sesame seeds

Preparation:

1. In a pan brown sugar and bring to a boil. Add the soy sauce, mirin, ginger, coriander and black pepper. Bring to a boil, then reduce the heat. Simmer for 30-40 minutes, until the volume is reduced to glaze a third and slightly thickened. Strain through a sieve into the glaze heatproof bowl. This mixture can be stored up to one week in the refrigerator.

2. Preheat the oven to 200°C. Dry the salmon fillets with paper towels and set aside.

3. In heatproof pan heat the oil over medium-high heat. Place salmon, skin side down fry for two minutes. Carefully turn the fillets and cook for another two minutes.

4. Place the pan with the salmon in the oven. Bake 10-15 minutes, or until cooked to taste.

5. Generously pour the finished fish glaze. Garnish with green onions and sesame seeds.
